Since our origins in the 19th century, when we were a horse changing station, we have opened our doors to celebrities from entertainment and politics, always offering discretion, comfort and attentive service. Under the care of our certified sommelier owner Gianluca Spinola, we have renewed the regal spirit of the nineteenth century and the Belle Époque, integrating it with modern services in our 11 elegant rooms. At the Santo Bevitore Restaurant, led by Chef Thomas Papa, we offer cuisine that harmonizes traditional recipes from Liguria and Piedmont with refined modern and gourmet touches. We only use fresh, local ingredients to create dishes that will make you feel special. Our selection of wines, coming from our prestigious and technologically cutting-edge cellars, completes the culinary experience with ideal pairings for each course.
